The idea of forming the Confrerie de la Chaine des Rotisseurs, Bailliage de Malaisie became a reality when various individuals including professionals and non-professionals interested in the promotion of gastronomic development in Malaysia met to form the society.  Mr Achim Ihlenfeld of the Kuala Lumpur Hilton and Mr Karl Waelti of the Equatorial Hotel worked together to make this reality come true.  In November 1978, the Confrerie de la Chaine des Rotisseurs, Bailliage de Malaisie was formally registered with the Registrar of Societies.  At the time of registration, there were 22 members, 11 from the professional fraternity and 11 from the non-professional fraternity.  Dato Lau Foo Sun was elected as the Baillig Delegue of Malaysia.

On 22nd July 1977, Mr Fil Juntereal, the Bailli Delegue of Singapore, together with the Officers and members from Singapore Chapter assisted the Bailliage de Malaisie to induct the Ad Hoc Officers and members of the Chaine des Rotisseurs, Malaisie at the Kuala Lumpur Hilton.  About 50 members and guests were present at this inaugural Diner Amical.

The first Council Meeting was held on 19th August 1977, at the home of the Bailli Delegue, Dato F S Lau at No 4 Selekoh Tunku, Bukit Tunku, Kuala Lumpur.  Mr Ted Wright of the Regent of Kuala Lumpur set up the 'Fijian Evening'.  The function was unforgettable and set the standard of presentation and gastronomy expected of the Confrerie de la Chaine des Rotisseurs.

Following this, we had the honour of a visit from the Grand Chancelier, Mr Jean Valby.  On 29th November 1977, the Confrerie de la Chaine des Rotisseurs, Bailliage de Malaisie was formally accepted by the Confrerie de la Chaine des Rotisseurs, Paris and on that date Mr Jean Valby and Mr Gessler personally assisted the induction of the officers and members of the Bailliage des Malaisie in the traditional manner and presented each officer and members with his Chaine ribbon.  This was followed by a Diner Amical with the theme 'Peacock World of the Second Empire' set to the music of Jacques Offenbach, held at the Regent of Kuala Lumpur the same evening.  This was one of the highlights in the history of the Chaine des Rotisseurs, Malaysia.

The year 1979/1980 was a year of consolidation of the Confrerie de la Chaine des Rotisseurs, Bailliage de Malaisie.  The membership remained at 30.

Effective from April 1980, luncheon functions were organised on 1st Friday of each month in rotation at one of the 3 hotels, namely Equaotiral, Hilton and Regent.  Subsequently in 1981 it was changed to the 1st Thursday of the month.

The Confrerie de la Chaine des Rotisseurs, Bailliage de Malaisie expanded their activities and a Penang Chapter was established in N ovember 1980.  Mr Karl Waelti was actively involved with the formation of the Penang Chapter.  The Baille Delegue of Malaysia presented a short brief on the aims and objectives of the Chaine des Rotisseurs to 20 members and 40 guests at the inauguration held at the Pelangi Ballroom, Rasa Sayang Hotel on 19th March 1981.  With the inauguration of the Penang Chapter, the membership of the Bailliage de Malaisie was increased to 60, including the new members from Penang.

On 24th October 1987, the Bailliage of Kuala Lumpur was organised and inaugurated by Mr Chin Kwai Yoong, the Bailliage of Kuching on 26th October 1987 by Mr Peter Mueller and the Bailliage of Johor Bahru on 7th September 1994 by Mr Heppi Forster-Lau.

These Bailliages were only responsible for the functions in the various cities to provide members throughout Malaysia the opportunity to experience fine dining and promotion of the philosophy and aims of the Chaine des Rotisseurs.

Besides the Diner Amical and luncheon functions, a Chef's Kitchen luncheon was introduced on 6th November 1982, when the non-professional members spent the whole morning the the kitchen to prepare and cook the lunch.  The Regent of Kuala Lumpur offered Suasa-on-the-Sixth kitchen for this memorable Saturday.

Penang Chapter suffered a severe set-back when 11 members including Mr Alexander Zink and Mr Manfred Woeller left the country to take up new appointment overseas.

From 1977, the membership increased from 22 members to 225 members in 1994 and up to 1996 the membershp stands at 175.
